iNGREDIENTS

  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • 1⁄2 tsp ground cinnamon
  • 1⁄4 tsp fine sea salt
  • 2⁄3 cup Sipology’s Maple Banana Cake tea, steeped strong (2 tsp in 2⁄3 cup water, steeped for 5 min)
  • 1 large banana, mashed
  • 1 large egg
  • 2 tbsp honey
  • 2 tbsp melted coconut oil
  • 1⁄2 tsp vanilla extract

DIRECTIONS

  1. Whisk together flour, baking powder, cinnamon and salt in a medium bowl.
  2. In another bowl, whisk together banana, egg, honey, coconut oil, vanilla and steeped tea.
  3. Pour the liquid mixture into the flour mixture and mix until combined.
  4. Lightly grease a pan and put over medium-low heat.
  5. Scoop batter into pan, about 2⁄3 cup at a time. Cook until small bubbles form on the surface of the pancakes, about 3 minutes.
  6. Flip, then cook until lightly golden on both sides. Repeat process with remaining batter, then serve with your favorite toppings.
