INGREDIENTS
- 5 large sweet potatoes
- 5 cups prepared Sipology’s Chai Tea of choice
- ½ cup Sugar
- 2 Eggs
- ¼ cup Butter
- 1 tsp Vanilla
- ¼ tsp Salt
- Topping
- ¼ cup Butter
- ½ cup Brown sugar, packed
- ¼ cup Flour
- ½ cup Pecans
DIRECTIONS
- Peel sweet potatoes, chop into 1-2chunks, and boil in 5 cups of prepared Chai tea until soft. Discard excess water.
- Preheat oven to 350 degrees.(F)
- Mix the mashed sweet potatoes with the sugar, eggs, butter, vanilla and salt and put into a casserole dish.
- Melt butter and add the brown sugar, flour and pecans and sprinkle on top of the sweet potatoes.
- Bake in the oven uncovered for 30 minutes or until bubbly and hot.
